It’s International Coffee Day today! If you love banana bread and coffee as much as I do, you will love Edd Kimber’s Espresso and cocoa nib banana bread. It infuses the banana bread with a lovely coffee flavor. It’s present without being overpowering or too intense.

Mkhallal Al-Bathenjan

It is the season of vegetables that are main ingredients of many Syrian dishes, one example is Eggplant (Bathenjan in Arabic). It is the time to make Makdous Al-Bathenjan, Mrabba Al-Bathenjan, Mrabba Al-Bathenjan Al-Halabi, and Mkhallal Al-Bathenjan (eggplant pickle).
Mkhallal Al-Bathenjan is prepared by stuffing baby eggplants with a mixture of chopped ground red pepper and garlic then preserved in brine. It is normally eaten with savory dishes.

Eid Al-Adha, Sweets – 2018

Eid Al-Adha “Festival of Sacrifice” or “Greater Eid”, Eid Al-Adha annually falls on the 10th day of the month of Dhul Hijja of the lunar Islamic calendar. It is celebrated all around the world, where people families visit, kids are given money, and Eid sweets are served to well-wishers and relatives. And like each year this post is about the sweets I prepared for Eid.

Eid Al-Adha – 2018

Eid Al-Adha “Festival of Sacrifice” or “Greater Eid”, Eid Al-Adha annually falls on the 10th day of the month of Dhul Hijja of the lunar Islamic calendar. The festivities last for three days or more depending on the country. Eid Al-Adha occurs the day after the pilgrims conducting Hajj, the annual pilgrimage to Mecca in Saudi Arabia by Muslims worldwide, descend from Mount Arafat.

Fattet Qamar Ad-Din

Qamar Ad-Din is dried apricot paste, the origin of Qamar Ad-Din is Syria. Qamar Ad-Din is used with various recipes such as Sharab Qamar Ad-Din, Fattet Qamar Ad-Din, Mhlabiyeh (Qamar Ad-din Pudding) and Nqou’eiyeh (Qamar Ad-Din cooked with rice).
Fattet Qamar Ad-Din is Sharab Qamar Ad-Din eaten with crispy flat bread, a specialty of Hama and Aleppo. In Aleppo, it is named Mariset Qamar Ad-Din. It is an easy recipe, a simple dish, yet delicious. Eaten in summer as breakfast, lunch or snack.
