Hboub is a famous dessert in Syria made of wheat berries. Previously I shared the recipe of Hboub that is prepared in Hama and Damascus, and this recipe is Hboub Halabi which describes the way of preparing hboub in Aleppo.
Let’s make Hboub Halabi:
Sujuq is a type of dry, spiced sausage that is somewhat similar to salami, with its three main characteristics being that it is salty, dry and has a high fat content. It consists of ground meat combined with various spices before being piped into a sausage casing. Sheep intestine has historically been the casing of choice, though nowadays both natural and artificial sausage casings are used. Sujuq is dried for at least three weeks before it is considered ready to consume. Also traditionally Sujuq is stuffed into clean, porous stockings and hanged for 3 to 5 days in a cool, dry place away from any sunlight.
I made sujuq without following the traditional methods and without drying because the weather in gulf is not suitable for air-dry, although I did not follow the traditional method but it has the same flavor of sujuq that I used to eat in Aleppo. In the post, I will show you different methods of using Sujuq.

Aleppo is known as “the home of stuffed vegetables and kibab (plural of kibbeh) حلب أم المحاشي و الكبب. According to “The Encyclopedia of Aleppo” there are more than 60 kinds of Kibbeh in Aleppo.
Kibbeh Meqliyeh Darawish is deep fried kibbeh similar to Kibbeh Meqliyeh, but in Aleppo is called Darawish and characterized by the above shape.
Let’s make Kibbeh Meqliyeh Darawish:
In Aleppo, Nisf Sha’aban is celebrated by making Ma’arouk Nisf Sha’aban (it is also called “Bariosh Nisf Sha’aban”) and Sambousek Lahmeh (meat pies). The recipe of Ma’arouk Nisf Sha’aban is the same to Ma’arouk Ramadan, but what makes it special is that it has to be formed into the shape shown in the photo above.
