Bouza ‘Ala Halib

Bouza ‘Ala Halib is a delicious Syrian Ice Cream made of whole milk, Sahlab (Salep) and mastic. In Damascus, milk ice cream is named “Emaa'”. It is also called “Bouza ‘Arabiyeh”.
Syrian ice cream whether milk ice cream, chocolate ice cream, or fruit ice cream is perfectly thick and stretchy, thank to the special ingredient “Salep” which is a white flour like powder made from the tubers of the orchid genus Orchis (including species Orchis mascula and Orchis militaris. In ice cream parlors in Syria, the ice cream is manually churned, it’s pounded with large wooden mallets and then pulled and stretched.

To Aleppo With Love – Mrabba Al-Qare’e Al-Halabi

“Mrabba Al-Qare’e Al-Halabi” or “Mrabba Al-Yaqtin AL-Halabi” (Aleppine Pumpkin Jam) is slightly different from previous Mrabba Al-Qare’e. Mrabba Al-Qare’e Al-Halabi is flavored with orange peel, cinnamon and clove, and served as a dessert with coffee, while Mrabba Al-Qare’e is served for breakfast with bread and cheese.

Khshaf Hamwi

Khshaf or Khushaf in middle east is a dried fruit and nut salad, an old fashioned dessert. But in Hama in Syria, Khshaf is a different dessert, Khshaf Hamwi is kind of milk pudding topped with syrup made of lemon juice, Sharab Tout Shami “mulberry syrup” and rose syrup, eaten in summer and very special in the holy month of Ramadan when it comes in summer.

To Aleppo With Love – Ma’arouk Nisf Sha’aban

In Aleppo, Nisf Sha’aban is celebrated by making Ma’arouk Nisf Sha’aban (it is also called “Bariosh Nisf Sha’aban”) and Sambousek Lahmeh (meat pies). The recipe of Ma’arouk Nisf Sha’aban is the same to Ma’arouk Ramadan, but what makes it special is that it has to be formed into the shape shown in the photo above.
