Cheese Rolls and Za’atar Rolls

These rolls are similar to “Jam Rolls”, but here I filled them with:
Ackawi Cheese.
Green Za’atar Mix.
Let’s make Cheese Rolls and Za’atar Rolls:
Filling (Ackawi Cheese)
1,2. Slice the Ackawi cheese, soak in water, change water frequently until most salt is washed out, Put a cheesecloth in a strainer and drain the cheese, and squeeze out all water completely.
3, 4. To the cheese, add ground sweet paprika and dried mint, then mix well.
Filling (Green Za’atar Mix)
5. In bowl, put green za’atar mix.
6. Add olive oil to the za’atar.
7. Green za’atar olive oil paste is ready.
8. Mix together water and milk, and warm it up a little.
9, 10, 11. Pour into mixing bowl, add 1 tsp of sugar, and yeast. Let sit for few minutes.
12, 13. After the yeast sit, add oil, 1/4 cup sugar, and salt.
14. Start adding flour a little by little until you have bread like dough.
15. Cover, and let it rise until doubled.
16. The final dough.
17. Now knead and transfer to a floured surface.
18. Divide the dough into 2 balls, and roll each of them into a diner plate sized circle.
19. Cut into quarters, and then cut each quarter into 3 rolls to be ( I cut each quarter into 2), You get 12 (I got 8 rolls), Repeat with the other ball of dough.
20, 21, 22, 23. Put a little cheese in each, and roll it up.
24, 25, 26, 27. Put a little za’atar olive oil paste in each, and roll it up.
28. Brush with some butter (I softened the butter and brush the rolls using my hand).
29. Bake at 380 °F (193 °C) for about 20 – 25 minutes, or until golden.

Notes and Tips
You can choose your favorite filling for these rolls.
The original recipe used egg yolk wash to brush them after rolling (I didn’t use it because I don’t like the smell of eggs). and the original recipe used about 1/2 tsp of butter on top of each roll, I brushed the rolls using the butter.
You can sprinkle the rolls with sesame seeds or Nigella seeds.

Help! I can’t find Ackawi cheese anywhere! What can I use instead?
Nadia: How about Mozzarella cheese? that taste isn’t the same, but I hope that helps :)
Note: I usually use a kind of Ackawi cheese that is known in Arabic as (Ackawi Chiki).
Thanks, I have just bought some majdouleh cheese so I am going to try it with that for now. If it doesn’t work out I will give mozzarella a try.
