Daqqah Hamwiyeh

Daqqah Hamwiyeh is a specialty of Hama. Made of ground Aleppo pepper, ka’ek crumbs, onion, tahini, pomegranate molasses, olive oil and chopped walnuts. It is normally eaten with Arabic flat bread as part of the breakfast or supper, or as a snack.
Let’s make Daqqah Hamwiyeh:
1, 2. Measure 100 g (1 cup) ground Aleppo pepper and put in a bowl.
3, 4. Add 200 ml (1 cup) water to the pepper.
5, 6. Stir to combine.
7,8. Set aside for 60 minutes.
Ka’ek is a middle eastern kind of bread stick that is incredibly crunchy and used usually served alongside tea. Ka’ek is available without sesame and with sesame, and the one without sesame is used in mhammara and Daqqah. In Syria, it is known as Ka’ek Al-Sakhanneh and made with chickpeas starter (leaven).
9, 10, 11, 12. Bring Ka’ek and break into pieces.
9, 10, 11, 12. In a mortar, using the pestle, crush Ka’ek into fine crumbs.
17, 18. After 60 minutes, when pepper is ready, add 25 g (1/4 cup) ka’ek crumbs.
19, 20. Finely chop medium onion.
21. Add 40 g (1 medium) chopped onion into pepper mixture.
22, 23, 24. Add 60 g (1/4 cup) tahini to pepper mixture.
25, 26, 27, 28. Add 120 g (1/4 + 1/8 cups) pomegranate molasses to pepper mixture, and stir.
29, 30. Stir until just combined.
31, 32. Add 1 1/2 teaspoons salt.
33, 34, 35, 36. Add 200 ml (1 cup) olive oil, and stir.
37, 38. Stir until just combined.
39, 40. Add 120 g (1 cup) chopped walnuts.
41, 42, 43. Stir until well combined.
44. Daqqah Hamwiyeh is ready. It can be served immediately, or Store for a couple hours before serving.
45, 46, 47, 48. To store Daqqah Hamwiyeh, put in a bowl and cover with a plastic wrap. Alternatively, put in a Tupperware. Store in the refrigerator and should be consumed in a week.
49 to 64. Serve in a plate and garnish with chopped walnuts. Always stir before serving in the plate.
Daqqah Hamwiyeh Wrap
65. Bring Arabic flat bread loaf.
66, 67, 68, 69. Add 1 tablespoon Daqqah Hamwiyeh, and spread with back of spoon.
70, 71, 72. Wrap. Set aside for 10 minutes before serving, that would make it tastier.
To Serve
73. Serve Daqqah Hamwiyeh, with Arabic flat bread and tea.

Notes and Tips
The pepper used for the recipe is sweet. It should be ground not flakes.
