To Aleppo With Love – Al-Bhar Al-Halabi

Al-Bhar Al-Halabi (Bhar Al-Daqqah Al-Halabi) is Aleppine seven-spice blend which belongs to Aleppo city. Bhar means “spices”, Halabi means “From Aleppo”, Aleppo in Arabic is “Halab”, and “Halabi” is derived from “Halab”. Al-Bhar Al-Halabi is widely used in Aleppine dishes.
Let’s make Al-Bhar Al-Halabi:
In Grams
1, 2, 3, 4, 5, 6, 7, 8. Measure spices: 25 grams allspice corns, 5 grams black peppercorns, 5 grams cinnamon sticks, 3 grams clove buds, 2 grams nutmeg, 2 grams cardamom seeds, and 1 gram ground ginger.
9, 10. Mix the spices together, and put the mixture of spices in a spice grinder and grind it until it turns into a powder.
11, 12, 13, 14. Pass the powder through a sieve into a bowl.
15, 16. Store powder in jar in cool dark place, and use when needed.
In Spoons
1 to 15. Measure spices: 4 tablespoons ground all spice, 1 3/4 teaspoons ground black pepper, 1 3/4 teaspoons ground cinnamon, 1 1/8 teaspoons ground clove, 3/4 teaspoon ground nutmeg, 3/4 teaspoon ground cardamom, and 1/2 teaspoon plus 1/8 teaspoon ground ginger.
16. Mix the spices together,
17, 18. Put the mixture of spices in a spice grinder and grind it.
19, 20, 21, 22. Pass the powder through a sieve into a bowl.
23, 24. Store powder in jar in cool dark place, and use when needed.
Use in recipes such as: Aqras Na’anaa, Kabab Khashkhash, Kibbeh Bi-Safarjaliyeh, Kibbeh Mabroumeh, Kibbeh Naiyeh Bi-Zeit Az-Zeitoun, Kibbeh Qassabiyeh, Lahmeh Bi-Karaz, Trit Bel-Laban, and many more.

Notes and Tips
I’ve tried different batches and quantities till I reached this mixture which is almost close to the one I bought from Aleppo. For me, the one I bought from Aleppo is of course better because it is prepared by experts in old souq of Aleppo (many sections of the souq in the ancient city of Aleppo were destroyed, ruined or burnt as a result of the war, read here).
You will notice that Al-Bhar Al-Halabi is used in most Aleppine dishes, I suggest making this mixture and storing it because you will definitely need it when you want to cook Aleppine dishes.
2 grams nutmeg is the weight of nutmeg without the shell.

i have been looking for a authentic recipe for this spice blend..ty but could u please post these measurements in tablespoons.teaspoons etc..ty in advance
mariam: Oh I’m sorry, I only have these measurements in grams (as you notice the spices are measured as whole spices so for accuracy they have to be in grams – to give you the measurements in spoons so I have to weigh each spice and blend it alone then measure it in spoons, I shall do this when I prepare a new batch).
Note: If you don’t have a scale, so try to get one because it makes cooking easier (I’ve two scales, one of them can measure 0.5 g)
