Cherry Tea Cakes
December 4th, 2010
I made these cookies for Eid Al-Adha and everybody loved them. The first thing my uncle said when he tasted them was “these are so delicious with a hint of almond, and not overpowering”.
Let’s make Cherry Tea Cakes:
Heat oven to 350°F (176 °C).
1. In large bowl, beat powdered sugar, butter, cherry liquid, almond extract and food color with electric mixer on medium speed until blended.
2. On low speed, beat in flour and salt.
3. Stir in cherries
4. Shape dough into 1 inch balls. On ungreased cookie sheets, place balls 2 inches apart. Bake 8 to 10 minutes or until edges are light golden brown. Remove from cookie sheets to cooling racks. Cool 20 to 30 minutes.
9. In 1-quart resealable freezer plastic bag, place baking chips; seal bag. Microwave on High 35 to 50 seconds, squeezing chips in bag every 15 seconds, until chips are melted and smooth. Cut small tip from bottom corner of bag; drizzle melted chips over cookies.

Notes and Tips
I halved the recipe, and got more than 40 cookies (my cookies are small in size).
I used butter.
Instead of shaping the dough into 1 inch ball, I shaped the dough into balls and made each ball equals to 4 grams, and that’s much better to get equal sizes.
I used white chocolate bar and used bain-marie to melt it.
These look soo cute and delicious.Vanilla chips sound too good.
