Above: Homemade Eswaret As-Set

Eswaret As-Set is kind of baklava known in other countries as “Barma” or “Ush Al-Ghorab”.  The name “Eswaret As-Set” means “Lady’s Bracelet ” or “Lady’s Wristlet”. It is prepared from phyllo dough that is formed to round shape, then melted ghee is added to each piece and baked in the oven. After baking, sugar syrup flavored with orange blossom water is added and the center is filled with crushed pistachios. I made the phyllo dough.

Tcharak (Horn of the Gazelle) is Algerian crescent shaped pastries. There are many types of Tcharak, the one I made is called “Tcharek Msakar” which means coated with sugar. The dough is prepared from flour, melted ghee, and orange blossom water. The filling is ground almond, powdered sugar, and orange blossom water. After baking, the pastries are dipped in orange blossom water then coated with powdered sugar.
