To Aleppo With Love – Rghif Mait Franji

“Mait Franji” is the Aleppine name of Tomato paste. “Rghif Mait Franji” is tomato paste wrap, a specialty of Aleppo. When we moved to Aleppo, I started noticing what my Aleppine friends at school used to bring for breakfast/snack and almost every day they had “Rghif Mait Franji”, then it became my favorite. Simple and very delicious.

Let’s make Rghif Mait Franji:

1, 2, 3. Bring Arabic flat bread loaf and carefully open it without tearing it.

4. Add two tablespoons tomato paste on one side of bread.

5, 6, 7, 8. Spread tomato paste with back of spoon.

9 to 16. Sprinkle with 1/4 teaspoon dried mint, 1/4 teaspoon ground cumin, and 1/4 teaspoon ground Aleppo pepper.

17, 18. Drizzle with olive oil.

19, 20. Spread with back of spoon.

21. Close with the other side of bread.

22, 23. Wrap and serve. Or do the next steps before serving.

25, 26, 27, 28. Place the wrapped sandwich on a panini press, close the lid and grill until the sandwich is hot and crispy.

29, 30, 32, 32. This another type of panini maker, it works by heating on the stove.

32. Rghif Mait Franji can be served with or without grilling. Serve Rghif Mait Franji with cucumber and tea.

1 loaf (100g) Arabic flat bread

2 tbsp tomato paste

1/4 tsp dried mint

1/4 tsp ground cumin

1/4 tsp ground Aleppo pepper

Olive oil, to drizzle

To Serve

Cucumber

Tea

Bring Arabic flat bread loaf and carefully open it without tearing it.

Add two tablespoons tomato paste on one side of bread.

Spread tomato paste with back of spoon.

Notes and Tips

Traditionally Rghif Mait Franji is prepared using homemade Aleppine tomato paste, but you can use any tomato paste you have.
