I made these cookies for Eid Al-Adha, they were delicious with hint of lemon and yummy raspberry jam.

Let’s make Raspberry Sugar Cookie Sandwiches:

1. In a large bowl, combine butter and shortening.

2. Beat with an electric mixer on medium to high speed for 30 seconds.

3. Add granulated sugar, baking powder, salt, cinnamon, and cloves.

4. Beat until combined, scraping bowl occasionally.

5, 6. Beat in egg, milk, vanilla, and lemon peel until combined.

7. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour.

8. Divide dough in half. Cover and chill about 1 hour or until dough is easy to handle.

9, 10. Preheat oven to 375 °F (190 °C). On a lightly floured surface, roll half of the dough at a time until 1/8 to 1/4 inch thick. Using 2 1/2 inch cookie cutters, cut dough into desired shapes. Place 1 inch apart on an ungreased cookie sheet. Using 3/4 inch cookie cutters, cut desired shapes from centers of half of the cookies. Reroll scraps as necessary.

11, 12. Bake in the preheated oven for 7 to 10 minutes or until edges are lightly browned. Transfer to a wire rack; cool.

13. Sift powdered sugar onto the cookies with the shapes cut in the middle. Spread a scant teaspoon of preserves over the flat sides (bottoms) of the cookies with no cutout centers. Top with the powder sugar-sifted cookies, bottom sides down. Serve within 2 hours.

Raspberry Sugar Cookie Sandwiches

1/3 cup (75 g) butter, softened

1/3 cup shortening

3/4 cup granulated sugar

1 1/2 tsp baking powder

1/4 tsp salt

1/4 tsp ground cinnamon

1/8 tsp ground cloves

1 egg

1/2 tsp vanilla

1/2 tsp finely shredded lemon
peel

2 cups all purpose flour

Powdered sugar

1/3 to 1/2 cup raspberry, apricot,
or strawberry preserves
or jam or orange marmalade

Notes and Tips

I replaced the amount of ground cloves with cinnamon.

I didn’t make the thickness of the dough as suggested in the recipe, and I rolled the dough to 0.15 inch (0.4 cm) thick.

I faced some difficulties when I made the cookies because the dough cracked a bit while rolling it.

I filled cookies with raspberry jam.

I got about 35 sandwich cookies.

To store: Layer the filled sandwich cookies between sheets of waxed paper in an airtight container; cover. Store in the refrigerator for up to 2 days. Or, layer the unassembled cookies between sheets of waxed paper in an airtight container. Store in the freezer for up to 3 months. To serve, thaw cookies. Assemble sandwiches as directed.
