Pink Lemonade Wafers

I made these wafers last month for Eid Al-Fitr, but I preferred to post the recipe this month since October is Breast Cancer Awareness Month, the pink color is great for that, and the cookies are so delicious.

Let’s make Pink Lemonade Wafers:

Heat oven to 400°F (204 °C).

1, 2. Combine 1/2 cup sugar, butter, egg, lemon peel, lemon juice and red food color in large bowl.

3. Beat at medium speed, scraping bowl often, until creamy.

4. Reduce speed to low; add flour, baking powder and salt. Beat until well mixed.

5. Cover; refrigerate until firm (1 hour).

6. Shape dough into 1/2 inch balls; roll in remaining sugar.

7. Place 2 inches apart onto greased cookie sheets.

8. Flatten balls to 1/4 inch thickness with bottom of buttered glass dipped in sugar.

9, 10. Bake for 5 to 7 minutes or until edges are lightly browned.

11. Sprinkle with powdered sugar, if desired.

Pink Lemonade Wafers

1 cup sugar

1/4 cup butter, softened

1 egg

2 tsp freshly grated lemon peel

1 tsp lemon juice

1 to 2 drops red food color

1 cup all purpose flour

1/2 tsp baking powder

1/4 tsp salt

Powdered sugar, if desired



Heat oven to 400°F (204 °C).

Notes and Tips

I used fresh lemon peel from two lemons.

I used two drops of red food color.

Instead of shaping the dough into 1/2 inch ball, I shaped the dough into balls and made each ball equals to 4 grams, and that’s much better to get equal sizes.

    I am not sure on how I arrived on your blog and actually it does matter, because I will come back soon! First: it is beautiful, the recipes are all very tempting and delicious-looking. Second, the pictures are beautiful, I like the style and colours of the props! and least but not last, I am absolutely fascinated by Middle-eastern culture (and food!!)so I like reading the info you write about Syria and the hint on arabic words!
