In Syria, Lebanon, Iraq, Jordan and Palestine, halaweh is typically the sesame or tahini-based form, which can be flavored in various ways and may include pistachios, almonds or chocolate.

Sesame Halaweh (Halawa), The primary ingredients in this confection are sesame seeds or paste (tahini), and sugar,  or glucose. Bois de Panama, called “Shersh Al-Halaweh” is added to stabilize the oils in the mixture or create a distinctive texture for the resulting confection.

Other ingredients and flavorings such as pistachio nuts, vanilla, or chocolate are often added to the basic tahini and sugar base.

In Syria, Halaweh is served with Syrian cheeses and Arabic flat bread.

Let’s make Halaweh Tehiniyeh and Cheese Wrap Sandwich:

1. Bring Arabic flat bread, I used small size bread.

2. This is Jebneh Bida Baladiyeh (Local Syrian White Cheese).

3. Slice the cheese, and top the bread with the cheese.

4. Add Halaweh tehiniyeh to cheese, this is plain halaweh.

5. Roll up.

6. Serve, some people serve this wrap sandwich with tea or milk.

Halaweh Tehiniyeh

Bring Arabic flat bread, I used small size bread.

This is Jebneh Bida Baladiyeh (Local Syrian White Cheese).

Slice the cheese, and top the bread with the cheese.

Add Halaweh tehiniyeh to cheese, this is plain halaweh.

Roll up.

Serve, some people serve this wrap sandwich with tea or milk.

Notes and Tips

Toast or buns can be used  instead of Arabic flat bread.

In this recipe I used Jebneh Baladiyeh, but other types of Syrian Cheeses can be used such as Mshallaleh or Majdouleh, I’ll talk about Syrian cheeses in another post.
