This is an easy salad, and wait a second, my mom invented this salad, all rights reserved!

Salatet Batata Meqliyeh means fried potato salad. It is delicious with chicken skewers, or meat Kebab. There are no measurements of ingredients, I leave that up to you.

Peel potatoes, cut to cubes, then deep fry potatoes in corn oil.

1. Finely chop parsley leaves, finely chop scallions, chop tomatoes into cubes, and add crushed garlic.

2. Add fried potatoes, add ground sweet paprika, lemon juice, salt and mix well.

If you want you can add olive oil, optional.

Potatoes

Corn oil, for frying

Flat parsley leaves, finely chopped

Scallions, finely chopped

Tomatoes, cut to cubes

Garlic, crushed

Ground sweet paprika

Lemon juice

Salt

Olive oil – optional

    Hahahaha sibbling-football rivalry: love it! Luckly my sisters and I all cheer for the same team. During the world cup we look like Smurfs because we paint ourselves blue and wrap ourselves in the Italian flag. A little extreme? Maybe, but it must be the Italian drama flowing through our veins!
    This potato salad looks quick, simple and very versatily. Perfect to bring to a BBQ as a side dish :)
